Spicy Ginger Chicken Bowl

Serves 2
What you need:
  • 1 large chicken breast diced into bite-sized pieces
  • 2 Tbsp hoisin sauce
  • 4 Tbsp light soy sauce
  • 2 Tsp grated ginger
  • 1 grated garlic clove
  • White pepper and onion powder to taste
  • 1 large zucchini chopped
  • 1 large carrot chopped
  • 2 cups of cooked white rice
  • 2 Tsp Roasted sesame seeds (optional)
  • 2 Tsp red pepper flakes (optional)

What to do:

  1. Marinate diced chicken with hoisin, soy sauce, ginger, garlic, onion powder and white pepper,
  2. Heat pan with high-heat oil, I used avocado oil.
  3. Add marinated chicken and stir.
  4. As soon as the chicken changes color, add veggies.
  5. Remove once both chicken and vegetables are cooked through, I like my veggies a bit crisp so I don’t let them go for too long (they get mushy).
  6. Add sesame seeds and red pepper flakes
  7. Remove and add to a bowl with a bed of rice.
  8. Enjoy 🙂
