Serves 2
What you need:- 1 large chicken breast diced into bite-sized pieces
- 2 Tbsp hoisin sauce
- 4 Tbsp light soy sauce
- 2 Tsp grated ginger
- 1 grated garlic clove
- White pepper and onion powder to taste
- 1 large zucchini chopped
- 1 large carrot chopped
- 2 cups of cooked white rice
- 2 Tsp Roasted sesame seeds (optional)
- 2 Tsp red pepper flakes (optional)
What to do:
- Marinate diced chicken with hoisin, soy sauce, ginger, garlic, onion powder and white pepper,
- Heat pan with high-heat oil, I used avocado oil.
- Add marinated chicken and stir.
- As soon as the chicken changes color, add veggies.
- Remove once both chicken and vegetables are cooked through, I like my veggies a bit crisp so I don’t let them go for too long (they get mushy).
- Add sesame seeds and red pepper flakes
- Remove and add to a bowl with a bed of rice.
- Enjoy 🙂
