Chilaquiles [They’re Spicy!!]

My ultimate favorite breakfast would have to be Chilaquiles. For those of you living under a rock, chilaquiles are a Mexican dish usually served for breakfast, that consists of tortilla chips drenched in a spicy red or green sauce made out of chilies and tomatoes, topped with Mexican crema, onion, and cheese.

I do have to warn you these are spicy, but you can manage the spice with the amount of chilis you use… or you can just omit them altogether.

INGREDIENTS:

  • 1 big celery stalk
  • Mexican chilaquiles tortilla chips (or you can just fry your own tortilla chips)
  • 6-7 tomatoes
  • 3-4 chile de arbol (this is very spicy but you can omit or use jalapenos)
  • half an onion
  • 3 cloves of garlic

BLEND IT ALL in you @vitamix and throw the mix into a pan. Bring to a boil and let it sit for a few minutes until it thickens a bit. Thrown in all the chips and toss around the sauce. Add them all to a serving plate, top with cheese, crema, onions, and cilantro. VOILA!
